Here is the problem with kimchi: it is a serious business, and many people would say don’t mess with it. It’s fun to make something like this at home though isn’t it?! It’s a wonderful little project. So, if you would like to try and make kimchi, here is a monster recipe. Remember, in Korea it is seen almost as a condiment. Eaten alongside many, if not most, things to add a bit of oomph.
