Ingredients: 400 g cold, cooked lasagne, cut into small cubes and put back in the fridge to go really cold; 2 litres rapeseed oil; Salt; 100 g breadcrumbs (like Ned Halley’s); 2 medium eggs, beaten; 4 tbsps plain flour

Like the arancini, there is no chance we’re bothering with a recipe for lasagne. You already have a recipe for lasagne, you make it all the time, you know what you’re doing. Next time you’re making it, make extra. Coz you are going to want to make some of these.

Ingredients

4 tbsps plain flour
100 g breadcrumbs (like Ned Halley’s)

Method

Lay out your flour, breadcrumbs and beaten egg in three separate bowls.

Take a square of lasagne and drop it in the flour. Try your best to keep it together and roll it around (the colder they are the less likely they are to fall apart). Next, pop the floured lasagne square into the egg and roll it about. You can use a fork if you like. Finally, drop it into the breadcrumbs and complete
