If you know what is good for you, you will have a roll of this cookie dough in your freezer at all times. It means you are never more than 20 minutes away from freshly baked cookies, and that you can indulge yourself with an ice cream sandwich any time of day or night.

Ingredients

  • 150 g salted butter, at room temperature
  • 100 g light brown sugar

Method

Preheat your oven to 170°C and line a baking tray with greaseproof paper.

Start by creaming together the butter and sugars with a wooden spoon (or with an electric whisk) until light and fluffy. Add the egg and beat well before stirring in the flour, cocoa powder and bicarbonat
