Every now and again for some unexpected reason you might find yourself with an abundance of fruit. Be it apples, pears, plums or (unlikely in this country) apricots. If this does happen, we want you to have a trusted recipe to turn to.
Find a heavy-bottomed and lidded saucepan and place over a medium heat. Add the water, sugar, cloves, cinnamon, vanilla pod and lemon zest to the pan and bring to the boil to dissolve the sugar.
Add the fruit to the pan and bring back to the boil. Turn the heat down to the lowest simmer and cover with the lid. Cook for 40 minutes. Check the fruit at this juncture, with the tip of a knif
