  • 500 g caster sugar
  • 500 ml water
  • squeeze o

Method

Put the sugar and water in a saucepan over a low heat to dissolve the sugar. Increase the heat and bring to the boil. Let bubble for a few minutes to thicken slightly, then take off the heat and add the lemon juice if required. Cool and chill if not using immediately.

Light Sugar Syrup

Reduce the sugar quantity by half.
