Put the sugar and water in a small saucepan over a low heat. When the sugar has dissolved, increase the heat and bring to the boil. Split the vanilla pod lengthways, scrape out the seeds and add them to the sugar syrup along with the empty pod. Take off the heat and leave the syrup to infuse as it cools. Remove the pod from the sugar syrup before using.
