Name: Veal Stock
Ingredients: 1 large onion, peeled and roughly chopped; 75 ml olive oil; 1.5 kg veal or beef bones; 1.5 kg veal or beef bones; 1½ tbsp tomato purée; ¼ garlic bulb, unpeeled; 2 celery sticks, peeled and roughly chopped; 2 large carrot, peeled and roughly chopped; 1 bay leaf; 1 thyme sprig; 5 litres cold water

Method

Preheat the oven to 220°C/Gas 7. Put the veal bones in a roasting tin, drizzle with half the olive oil and roast in the oven for about 1 hour
