  • 1.5 kg large Charlotte potatoes
  • 1 garlic bulb, split horizontally
  • small bunch

Method

Wash and dry the potatoes well. Place them in a pan with one half of the split garlic bulb and the thyme. Add a little seasoning, then pour on the duck fat to cover. Simmer over a very low heat for about 20 minutes until slightly under-cooked; the potatoes should have a slight resistance when pierced with a small sharp knife.
