Bring a pan of water to the boil. Have a bowl of iced water ready on the side. Peel and thinly slice the ginger, using a swivel vegetable peeler or mandolin. Blanch the ginger slices in the boiling water for a few seconds, then immediately transfer to the iced water, using a slotted spoon. Repeat the process once more. Drain well.
