Braised Veal Shin

  • 1 veal shin, about 1.6 kg, boned and trimmed
  • 4 garlic cloves, peeled and finely crushed<

Method

Open out the boned veal shin on a chopping board and rub all over with the garlic, chopped herbs, salt and pepper. Roll up the shin into a log and secure with kitchen string.

Heat 2 tbsp olive oil in a flameproof casserole or heavy-based pan until hot. Add the veal shin and fry for 2–3 minut
