Duck Eggs

  • 4 duck eggs
  • sea salt and black pepper
  • 50 g unsalted butter, softened

Method

Bring a pan of water to the boil. Using a slotted spoon, gently lower the duck eggs into the water and simmer gently for 7½—8 minutes. Take out the eggs and refresh in a bowl of cold water, then carefully peel off the shells. The egg whites should be set but the yolks still runny.
