  • 400 g mixed strawberries (including some fraises des bois if available)

Method

First, prepare the infusion. Pour the red wine and wine vinegar into a pan, add the Armagnac, sugar and spices, and bring to a simmer. Meanwhile, whiz the berries in a food processor to a fine purée, then push through a fine sieve to remove the seeds.
