Method

To prepare the syrup, put the Champagne, sugar, ginger, cinnamon and vanilla pod in a pan and bring to the boil. Reduce the heat and simmer for 5 minutes to allow the flavours to infuse. Strain the syrup through a fine sieve.

Return a quarter of the syrup to the pan, add the strawberries and bring to the boil. Immediately remove from the heat, tip into a bowl and set aside to cool. Repe
