Found! The shortest, simplest explanation of a cooking technique ever to grace the pages of a cookbook. This is more of an instruction, a call to action, my insistence, than a recipe. Quality lamb, given the simplest treatment, tastes too good to leave out of this book.

Ingredients

  • 1 rack, 500 g, lamb ribs (with fat on them)
  • Salt, to season
