This idea came to me when I urgently wanted to make a bacon and Kimchi grilled cheese sandwich (highly recommended) and, to my horror, I realised that we didn’t have bacon. Biltong is always on hand in our house and I had a hunch that its saltiness would work just as well with the funk of Kimchi. I swapped the cheese with a couple of fried eggs.
