Sandwiches are quick breakfasts, and this one stays together on the go and stores well, too. (They’re not too saucy and the ingredients are layered so there’s “glue”—in the form of hummus—on the top and bottom.) You can make it the night before and reheat it in the toaster oven as is or wait until the morning to put the “wet” veggies on. It tastes particularly good after a long early morning workout.
