This lighter, veggie-infused version of mac and cheese is fast enough for a weeknight dinner, and it’s a dish that’ll have even the pickiest kids asking for seconds. It’s ready in less than 30 minutes, even if you have to make the Roasted Red Pepper Queso from scratch. This is a saucy recipe—if you find there’s too much sauce for your liking, save about one third of it for another meal, or stir in a pound of steamed broccoli or cauliflower. Serve with sautéed greens or steamed broccoli.
