The trick to oil-free dressings is creating just the right balance of flavors. Here, we use three bright acids, some sweeter or stronger than others, paired with mango. Cilantro brightens it up, and the final dressing is sweet, tangy, and 100 percent oil-free. Serve on black beans, tofu, or any summer salad. If your mango is very ripe, you can omit the sugar.
