While some people consider chia pudding to be a breakfast dish, this one definitely falls into the dessert category. We use dark sugar for a rich sweetness, plus a mix of almond and coconut milks for a more dessert-like flavor. If you do prefer to eat this for breakfast, you can make it lighter by using all almond milk instead of adding coconut milk.
