When you are carbo-loading, this is the perfect whole food dessert. We sweeten short-grain brown rice with coconut milk and dark brown sugar, then add lime juice and top with mango. The only “trick” is that your mango needs to be really ripe and sweet. That’s it! No fresh mango? Swap in whatever’s in season: peaches, berries, or even ripe pears.
