Mug cakes are all the rage, and while a microwave is not one of our “must-have” kitchen items listed in Chapter 2, we do appreciate the ease it provides if you’re cooking for one. This simple cake takes less than two minutes to cook and doesn’t leave any leftovers. Plus, you don’t have to share!


  • ¼ cup (60 ml) almond milk
  • 1 tablespoon cooked, <


  1. Combine the almond milk, beans, sugar, and vanilla in a mug. Stir in the cocoa, flour, salt, and baking powder until just combined. Drop the chocolate chips in the center.
  2. Microwave until the cake is set around the edges but the center is soft, about 90 seconds. Let sit for 5 minutes, then eat!
