What a flavour explosion! Aloo chaat is a gorgeous Indian street food snack made with potatoes, sweet, sour and spicy chutneys and crunchy fried sev. There is a similar version called chana chaat, which is made with chickpeas/garbanzo beans. I’ve combined the two here and switched up the pulses for nutty kala channa (black chickpeas) for a toothsome delight. Nylon sev are deep-fried vermicelli noodles; if you can’t find any, Bombay mix works too – at a push.
