This is one of my Aunty Geeta’s specialities. I love it because leek is such an overlooked, humble vegetable, yet this is such a simple, delicious recipe. The nutty flavour of roasted channa dal gives the dish a lovely crunch. It is easily halved to serve two.


  • 3 tbsp vegetable oil
  • 2 tsp nigella seeds
  • 2 large leeks


  1. Heat the oil in a non-stick frying pan over a medium heat. When hot, add the nigella seeds and fry until they start to crackle, then add the leeks with the spices, salt and sugar. Cook, stirring, for 5–6 minutes, or until softened.
  2. Add half of the lemon juice and taste for seasoning, adding in the remaining lemon juice if needed.
