This home-style “quick pickle” with carrots and radishes is nice as a tangy side with one of my spicier vegetable curries – or even served alongside a dal and rice. It’s light, crunchy and fresh when eaten immediately, but if you keep it in the refrigerator for a few days, the flavours mellow and the veg soften to create a delectable relish that is great in sandwiches or even used to top burgers.
