Simple, refreshing, cleansing, I can’t get enough of this cooling green salad. Although the kick of ginger gives it a bit of tongue-tingling interest, it’s ideal served on the side of any spicy dish for dousing the fires.

Ingredients

  • 1 cucumber
  • handful of fresh coriander/cilantro, stems and leaves finely chopped
  • handful of fresh mint<

Method

  1. Roughly chop the cucumber into small bite-size pieces and place in a mixing bowl with the chopped herbs and grated ginger.
  2. Stir in the olive oil and lime juice, then add the black salt.
  3. Taste for seasoning before serving.
