This is basically a spiced aubergine/eggplant purée – if you like baba ghanoush, you’ll love this. It’s a very traditional and popular dish in India, and is amazing served with rice or flatbreads. Flame your aubergines first to get the flesh all smoky, then mash it into a sauce of fresh tomatoes, ginger, mustard oil and green chillies, to make a punchy dip (or side dish) that will blow your mind.
