A tomato and onion salad is an essential on every Indian dining table. Sometimes, it can be as simple as the veg just chopped up and tossed together, but to take it to another level I like to spice things up with some earthy nigella seeds and some citrussy chaat masala. This is a cheat’s way to quickly pickle the shallots, softening them and taking away some of that raw acidic edge. Ideally, make this in season when tomatoes are at their sweet and juicy best.
