Butter/lima beans are a wonderfully versatile ingredient in a vegetarian curry – their denser, heavier texture give the dish good structure. And I realize that it might sound like an unusual combination, but I have found that the Spanish piquillo pepper makes a fabulous addition to this mellow bean-based korma, giving it a little sweet, fruity lift. The crème fraîche that I use instead of the traditional cream also gives this a lighter, tangier flavour.
