These are not an everyday bread – we eat puris when we want a treat. They are the breads of celebration in my family, cooked up for parties and puja festivals. A spiced broad/fava bean filling gives them an extra layer of deliciousness. Traditionally fried in ghee, I’ve used vegetable oil for convenience, as well as frozen beans (by all means, substitute freshly podded beans when they are in season, if you have the time to prepare them).
