A festival of colour and flavour, this kale salad is life-changing – I can’t get enough of it and eat it almost every day. If you have leftovers, they last for about 3 days in the fridge (the apple cider vinegar stops the apples from turning brown). Packed with nutrients, the zingy apple, fennel and goji berries lift it to another dimension and the dressing is to die for. With toasty crunch from the nuts and seeds, I can’t think of anything better.
