This is an easy and interesting way to mix up your rice with some healthy greens. It is best made with pre-cooked rice, either made a few hours before or even the day before, but you can make the rice just before cooking the dish – just ensure it is fully cooled and drained before using. It is lovely served with Monsoon Mushroom Madras or the Black Dal.
