This is a really easy and nutritious raita. Cooling and wholesome with some added greens, it’s great for serving to kids and is ideal served alongside any spicy curry or as a dip for fried chops or bhajis.

Ingredients

  • 100 g/ oz baby spinach
  • 200 g/7

Method

  1. Add the baby spinach to a pan of boiling water and cook for 2 minutes, then drain and transfer to a bowl of iced water to stop the cooking process. Fully squeeze the water out of the spinach, then roughly chop.
  2. Add the chopped spinach to a bowl, then mix in the Greek yogurt, lemon juice and salt.
