This is one of my favourite chutneys and my Aunty Mona’s recipe really can’t be beaten. It is so eye-wateringly good, you’ll be looking for excuses to serve it with everything. You must get green unripe mangoes for this – you’ll find them in Asian shops and they are quite hard and white-fleshed inside. The pungent punch of mustard oil is key, too.
