This is a new spin on the classic egg curry that I would often have while growing up. The spiced, slightly crispy eggs with a little bite to them are utterly delicious. Mashed into rice or eaten with bread, there is a substantialness to them that is almost meaty. The addition of the cauliflower florets serves to further bulk up this saucy curry, making it a satisfying, filling supper for two. It is easily doubled to feed more.
