Koftas don’t have to be meat-based – in India, vegetarian koftas are also common, made from paneer or potato and sometimes gourd or other mixed veg. I love paneer koftas. These golden cheesy fried dumplings soak up all the delicious flavours of the masala here for a divine, richly comforting curry. It is very slightly more time-consuming than my usual dishes, but it is so worth the extra effort. The recipe is easily doubled to serve four.
