Great for a vegan breakfast, scrambled tofu is not dissimilar to scrambled eggs. Given a punchy spicing, and rolled into tortilla wraps (or chapatis work just as well), it will certainly wake you up in the morning!


  • 2 tbsp vegetable oil
  • 1 x 280 g/10 oz block of firm tofu, well drai


  1. Heat 1 tbsp of the oil in a non-stick frying pan/skillet over a high heat. When hot, crumble in the tofu (in small pieces) and add the salt. Leave to cook for 3–4 minutes without moving it, then stir and cook for a further 3–4 minutes, or until starting to crisp up all over.
