I’ve taken inspiration from South Indian food for this easy-to-make, vegan pilau. The hint of crunch from the peanuts and the gentle golden hue lent by the turmeric makes it feel a little bit special. It goes well with any curry and is even nice on its own as a snack. If you’re not entirely plant-based, you can swap the vegetable oil to ghee for an even more indulgent flavour, or you could swap the peanuts for cashews if you are feeling very extravagant.
