Of course you could put this filling in a plain egg pasta, but the buckwheat adds a depth of flavor. A sauce of sun-dried tomatoes, olives, and cream is a perfect accompaniment. For sauce that is less rich, try a simple tomato sauce with basil or thyme.



Buckwheat Pasta is especially nice but you could use the basic pasta as well.
