This pasta is as good as the sausage you use. You can use a wonderful fennel sausage from your favorite Italian market and remove it from the casings, or you may make the sausage yourself, using the recipe on. Sausage is very easy to make at home, for it is simply ground meat seasoned with herbs and spices and bound with a little liquid. Homemade sausage doesn’t keep more than a few days, but it also isn’t loaded with preservatives and nitrates. So not only will it taste better, but it will be better for you. The sausage in this recipe can be shaped into tiny meatballs or cooked loose.
