Risotto is one of those dishes that makes people feel taken care of and satisfied. If the Italians hadn’t come up with it, an eccentric Jewish mother might have by chance by adding too much rice to the chicken soup. Although most recipes for risotto are written for six (Italians have large families), remember that it is worth making for just you alone. It is such a comforting and wonderful food.

Arborio rice is the Italian short-grain rice from the Po delta that is used exclusively for risotto. I wish I could tell you that another short-grain rice is acceptable but I cannot. If you are unable to find this rice, forget risotto.
