  • 12 cups chopped Swiss chard (about 3 large bunches)
  • ½ cup olive oil
  • 2 cups chopped onions
  • 2 cloves garlic, minced
  • 1 tablespoon paprika
  • 1 teaspoon ground coriander
  • 1 cup cooked chick-peas (optional)
  • ½ cup chopped cilantro
  • Salt and freshly ground pepper
  • 2 to 3 tablespoons fresh lemon juice


    Rinse the chard well and drain but do not dry; the water clinging to the leaves will help wilt the chard during cooking.

    Heat the oil in a large sauté pan over medium heat. Add the onions and cook until translucent, about 7 minutes. Add the garlic and spices and cook 2 minutes more. Then stir in the chard and cook, partially covered and stirring occasionally, until tender and wilted, about 5 minutes. Stir in the chick-peas if using and simmer 2 minutes. Add the cilantro and salt and pepper to taste; cook 1 more minute. Stir in the lemon juice to complete the balance of flavors.
