These cookies are somewhat fragile and resemble those terra-cotta tiles on roofs in Italy. They are a wonderful accompaniment to ice cream or sorbet.

Ingredients

  • 1 cup pine nuts
  • cup sugar
  • 6 tablespoons

Method

Preheat the oven to 350°F. Line 2 baking sheets with baker’s parchment.

Place all the ingredients in a mixer bowl and mix until blended. Drop the batter by heaping tablespoons 3 inches
