Although this is an extravagant canapé, I assure you that it is not only worth the effort but you can then take all those broken lobster shells and make a very nice lobster stock out of them. This is what the great French chef Escoffier, who was originally from the mountainous area of Provence, recommended.

Ingredients

  • Two 1-pound live lobsters
  • ¼ cup (½ stick) unsalted butter, at room temp

Method

  1. Pour about an inch of water into a large pot that will fit both lobsters and bring to a boil. Put the lobsters in and cook until bright red, 15 to 17 minutes. Drain and let cool. Crack open the shells and remove all the meat, placing the meat from the arms and legs, as well as the tomalley and coral, in one bowl. Remove the meat from the claws and tail, slice it thinly,
