Les gougères are traditional hors d’oeuvre from Burgundy, but are sometimes eaten after the main course and before dessert. Some cooks claim that this pastry originates in Sens, but it is prepared in other parts of France, too. It is made with pâte à choux or ordinary cream puff pastry. The puffs can also be filled (see variation).
