Pork and Pine Nut Meatballs in Romesco Sauce

This meatball tapa, called pilota, is also known in the French Catalonian province of Roussillon by the same name or as bols-de-picoulat, which translates to “balls of ground meat.” There are many different recipes, sometimes using pork, sometimes beef, sometimes sausage, and sometimes with the addition of chicken livers. But almost all recipes call for pine nuts and cinnamon. They are most delicious served with Romesco sauce, but if you want to keep it simple, at the end of t
