Mayonnaise

I often use a jar of Hellmann’s when I need mayonnaise, and its quality is just fine. But since mayonnaise is not really hard to make, and because it is better tasting when homemade, I like to use this recipe. Mayonnaise is all about emulsifying egg and oil. The kind of oil you use will affect the taste of the final mayonnaise. I use a combination of oils, but you could use a straight extra-virgin olive oil for a very rich olive-tasting mayonnaise, which is quite nice with some of the Medit
