This Italian frittata is called frittata alla pizzaiola, which means something like “à la pizza style,” because it is meant to resemble a pizza. The frittata is finished under the broiler and when the sides puff up, it will look like a pizza with an inviting golden crust. If you don’t have a skillet that can go under a broiler, use whatever skillet you have and let the handle stick out, with the oven or broiler door open.
