This elegant antipasto is the kind of preparation one would find in a fancy restaurant in Lombardy or Emilia-Romagna. It is a favorite starter to pass while people are still milling around at a party. The inspiration is purely haute cuisine, but these crispelle are surprisingly easy to prepare.
