This traditional calzone, called calzone antica, or old-style calzone, is found in rural Apulia where the cook is as likely to use Swiss chard, beet greens, spinach, and the particularly delightful escarole. In Italian cooking, a recipe described as antica, “antique” or “old,” does not necessarily mean it has an ancient history. It can simply mean that it is the traditional way of cooking it or a simple way.
