This is my interpretation of a Sardinian focaccia that I found particularly good and well suited as a morsel to pass at a party. The pancetta should be chopped into about ⅜-inch cubes. Pecorino pepato cheese is a young pecorino cheese with peppercorns thrown into the curd. It can usually be found in Italian markets.

  1. Prepare the pizza dough. Divide the dough into 2 balls and let rise as instructed.
  2. Preheat the oven to 450°F with a large baking stone for 30 minutes.
  3. Roll or stretch the dough out until 16 inches in dia
